Healthy Chips

by Lisa Busby

Normally chips (US fries) contain more than 12 grams of fat and 235 calories per serving. They're not exactly the kind of thing you want to eat regularly if you 're keeping an eye on your health or your waist size.

However, it is possible to eliminate almost all the fat by making them yourself at home. Believe me, it's easy. The result is a crisp, thick, satisfying chip.

Method
  1. Cut 500g (1lb) large red or white potatoes into chip size strips. You don't even have to peel them if you don't feel like it.
  2. Put the chips in a bowl and sprinkle with black pepper and some cayenne pepper, paprika or chilli powder.
  3. Pour one beaten egg white over the chips and toss to cover evenly. (The egg white will make the crispy.)
  4. Place the chips in a single layer on a baking tray that's lightly coated with non-stick cooking spray. Bake at 200 degrees Celsius, gas mark 5, for 30-40 minutes, flipping the pieces occasionally so they won't stick. They're done when they are golden brown on all sides.

Now there's an idea for the next editorial meeting - Ed
